Researchers have found a substantial link between increased levels of nitrates in our environment and food with increased deaths from diseases, including Alzheimer’s, diabetes mellitus and Parkinson’s.

Led by Suzanne de la Monte, the researchers studied the trends in mortality rates due to diseases that are associated with aging, such as diabetes, Alzheimer’s, Parkinson’s and cerebrovascular disease, as well as HIV. They found strong parallels between age adjusted increases in death rate from Alzheimer’s, Parkinson’s, and diabetes and the progressive increases in human exposure to nitrates, nitrites and nitrosamines through processed and preserved foods as well as fertilizers. Other diseases including HIV-AIDS, cerebrovascular disease, and leukemia did not exhibit those trends. De la Monte and the authors propose that the increase in exposure plays a critical role in the cause, development and effects of the pandemic of these insulin-resistant diseases.
The researchers recognize that an increase in death rates is anticipated in higher age groups. Yet when the researchers compared mortality from Parkinson’s and Alzheimer’s disease among 75 to 84 year olds from 1968 to 2005, the death rates increased much more dramatically than for cerebrovascular and cardiovascular disease, which are also aging-associated. For example, in Alzheimer’s patients, the death rate increased 150-fold, from 0 deaths to more than 150 deaths per 100,000. Parkinson’s disease death rates also increased across all age groups. However, mortality rates from cerebrovascular disease in the same age group declined, even though this is a disease associated with aging as well.
De la Monte notes, “Because of the similar trending in nearly all age groups within each disease category, this indicates that these overall trends are not due to an aging population. This relatively short time interval for such dramatic increases in death rates associated with these diseases is more consistent with exposure-related causes rather than genetic changes.” She also comments, “Moreover, the strikingly higher and climbing mortality rates in older age brackets suggest that aging and/or longer durations of exposure have greater impacts on progression and severity of these diseases.”
De la Monte says, “We have become a ‘nitrosamine generation.’ In essence, we have moved to a diet that is rich in amines and nitrates, which lead to increased nitrosamine production. We receive increased exposure through the abundant use of nitrate-containing fertilizers for agriculture.” She continues, “Not only do we consume them in processed foods, but they get into our food supply by leeching from the soil and contaminating water supplies used for crop irrigation, food processing and drinking.”
Nitrites and nitrates belong to a class of chemical compounds that have been found to be harmful to humans and animals. More than 90 percent of these compounds that have been tested have been determined to be carcinogenic in various organs. They are found in many food products, including fried bacon, cured meats and cheese products as well as beer, wine and water. Exposure also occurs through manufacturing and processing of rubber and latex products, as well as fertilizers, pesticides and cosmetics.
Nitrosamines are formed by a chemical reaction between nitrites or other proteins. Sodium nitrite is deliberately added to meat and fish to prevent toxin production; it is also used to preserve, color and flavor meats. Ground beef, cured meats and bacon in particular contain abundant amounts of amines due to their high protein content. Because of the significant levels of added nitrates and nitrites, nitrosamines are nearly always detectable in these foods. Nitrosamines are also easily generated under strong acid conditions, such as in the stomach, or at high temperatures associated with frying or flame broiling. Reducing sodium nitrite content reduces nitrosamine formation in foods.
Nitrosamines basically become highly reactive at the cellular level, which then alters gene expression and causes DNA damage. The researchers note that the role of nitrosamines has been well-studied, and their role as a carcinogen has been fully documented. The investigators propose that the cellular alterations that occur as a result of nitrosamine exposure are fundamentally similar to those that occur with aging, as well as Alzheimer’s, Parkinson’s and Type 2 diabetes mellitus.
De la Monte comments, “All of these diseases are associated with increased insulin resistance and DNA damage. Their prevalence rates have all increased radically over the past several decades and show no sign of plateau. Because there has been a relatively short time interval associated with the dramatic shift in disease incidence and prevalence rates, we believe this is due to exposure-related rather than genetic etiologies.”
The researchers graphed and analyzed mortality rates, and compared them with increasing age for each disease. They then studied United States population growth, annual use and consumption of nitrite-containing fertilizers, annual sales at popular fast food chains, and sales for a major meat processing company, as well as consumption of grain and consumption of watermelon and cantaloupe (the melons were used as a control since they are not typically associated with nitrate or nitrite exposure).
The findings indicate that while nitrogen-containing fertilizer consumption increased by 230 percent between 1955 and 2005, its usage doubled between 1960 and 1980, which just precedes the insulin-resistant epidemics the researchers found. They also found that sales from the fast food chain and the meat processing company increased more than 8-fold from 1970 to 2005, and grain consumption increased 5-fold.
The authors state that the time course of the increased prevalence rates of Alzheimer’s, Parkinson’s and diabetes cannot be explained on the basis of gene mutations. They instead mirror the classical trends of exposure-related disease. Because nitrosamines produce biochemical changes within cells and tissues, it is conceivable that chronic exposure to low levels of nitrites and nitrosamines through processed foods, water and fertilizers is responsible for the current epidemics of these diseases and the increasing mortality rates associated with them.
De la Monte states, “If this hypothesis is correct, potential solutions include eliminating the use of nitrites and nitrates in food processing, preservation and agriculture; taking steps to prevent the formation of nitrosamines and employing safe and effective measures to detoxify food and water before human consumption.”

Why is the medical community so slow to realize that all of our medical problems are coming from gasoline? Nitrates, MTBE, benzene, etc are ALL CONSTITUENTS OF GASOLINE. The facts are that the government went around making everybody pull up the old gasoline underground storage tanks becasuse they were all leaking. Lead was touted to be a “detergent” additive. It brightened metal alright… All too well! An additive called Tetra-Ethyl-Lead, now outlawed in gasoline, changed the molecular structure of all the underground gasoline storage tanks causing them to literally split apart at the seams. Billions of gallons of gasoline have been released into our water table over many years. Now, the degrading constituents of gasoline may be found in practically ALL DRINKING WATER, all around the world!
According to documents from the desk of Carolyn Hoskinson, Acting Director for The Office of Underground Storage Tanks, Washington, DC, {The United States Environmental Protection Agency}: There are 28,070 active underground gasoline storage tanks in North Carolina (for example). 24,442 of which have been reported LEAKING.
A startling revelation… Almost every one leaked. As I was drawing in a few tanks on a homemade state map of these 28,070 sites, {in North Carolina} I began to realize; there is a vast network of rivulets of gasoline, a flowing, moving system creating pools which produce more rivulets that interconnect almost like the vasculature of the human body, interconnecting all these sites with underground lakes, rivers, and pools of gasoline all over the United States and it is most probable that it is like this all over the world. It is most probable that the vast majority of ALL of us have had some limited exposure to gasoline.
The extent of this problem was discovered by the Reagan Administration in 1984. The scope of this paper is focused on the medical aspects and is written as informational material, targeting physicians. Despite that, the reader should know that President Ronald Regan was responsible for initiation of a Congressional mandate creating The Environmental Protection Agency in 1985. As a result
of this, lead was immediately outlawed in gasoline in 1986. Imagine that! But it was too little, too late. The underground storage tanks had all leaked badly, most of them for many years. Gasoline was first refined in 1885 and shortly thereafter, put into commercial underground storage tanks on practically every street corner!

of gasoline underneath all of the major cities in the world. Dallas, London, Tokyo, Paris, LA, Delhi, New York. There are rivers and tributaries and pools of gasoline that interconnect all these underground storage tanks much like the vasculature of the human body. This is a scientific fact!
Oral consumption of these degrading constituents of gasoline are causing diabetes, alzheimer’s, parkinson’s, autism and specific brain tumors. The degrading constituents of gasoline are being consumed daily by the general public. It is affecting our DNA permanently! Daily exposure is changing the genetics of the human race. These seemingly random diseases are increasing at a rate of from ten to seventeen percent per year. There is no plateau in sight. In fact, simple math tells us that in only five more years, nearly half of all Americans will have these diseases. In just a little over ten years, we will ALL have them! And that does not account for the exponential. In other words… it is accelerating. No wonder Obama has to have government controlled health care! The human race now has a very limited time in which to produce healthy children.
**The entire southern two thirds of Florida is now recognized as a children’s brain cancer cluster. The shocking truth, when plotted on a “cluster” map of the state, it follows the flow of the Everglades. Scientists just can’t seem to figure out why. We are already seeing the increase in diabetes, birth defects, autism, Downs syndrome, and brain cancer clusters in children. It affects the DNA. Permanently. To such an extent that the DNA replicates less and less effectively with each successive generation. [Benzene has been shown to be metabolized into reactive compounds that permanently bind to DNA]. It is quite possible that autism is merely the genetically defective result of the gasoline poisoning of the parents. It follows sound reasoning that a physician would want to ask them, “Which one of you is diabetic”? This author predicted five years ago that the human race may only have a very limited amount of time left to produce healthy children. Gasoline is way too toxic a substance to be placed in the hands of
John Q. Public, and it appears that we really need to find a better method of powering all these vehicles we drive daily, but it is already too late. If gasoline production was stopped entirely, right now, today, the levels of benzene and toluene in our drinking water would likely continue to increase for a number of years due to hydrogeological factors, and the existence of confined aquafers of gasoline deep
within the Earth. This message must be delivered to the general public. The American public needs to be educated. Then, parents could protect their children in such simple ways as teaching them not to play in water puddles. The contaminants concentrate themselves is such places. If only people knew to blot the oily residue from the surface of their truck stop coffee with a paper napkin, it removes a large per-
centage of the contaminants. Folks in rural areas, not near public water supplies could drink bottled water. There is no safe well water left on this planet! {In my opinion}. All public water systems now contain some trace of the degrading constituents of gasoline. SOME MUCH MORE SO THAN OTHERS. Like Los Angeles, and Denver, Colorado, particular areas of deep concern. LA is located at the base of the mountains, BETWEEN THE MOUNTAINS AND THE SEA. Remember, the groundwater flows downhill and follows the path of least resistance on it’s way to the oceans from whence it came. Thousands of tractor trailers deliver goods and food EVERY DAY to the population living in LA. Due to it’s sheer size and number of people living there, many

CONCENTRATED ARES OF THESE DISEASES ALL AROUND LA. Anyone with the money to do so, will eventually leave this city! This author predicts that in the not too distant future, LA will become a vacated, massive garbage dump for the less contaminated cities of the west coast, a decaying ghost town with a small population of sick and dying desperate people that simply do not have the money or the means to move away. Also, please note that antidepressants like Prozac, and Zoloft are now found in all drinking water… All around the world. According to EPA sources, this is due to the urinary excretion of these drugs by the patients taking them. Well… don’t believe this is by accident. If these “serotonin reuptake inhibitors” will block the neurotransmitters, then they might block something else in the brain…. like absorption of lead or benzene metabolites! In cases of gasoline poisoning, the first symptoms to appear are usually slight loss of memory and other mild cognitive effects, such as walking into a room and forgetting why you are there. SRI’s could, in my opinion, help to delay these effects! Our government might try to protect us by connecting public water supplies to all populated areas, and dumping huge quantities of serotonin reuptake inhibitors into the water supply, but our government will not TELL us. They CANNOT tell us! But now YOU know… cancer, lukemia, diabetes, parkinsons, alzhimers, autism… all exponentially increasing… **It is in the water! All around the world! My father had colon cancer and now suffers from Parkinson’s. Nitrates(salt peter) were loaded onto his morning oatmeal in college to help the men “focus on their studies-not girls.” I am trying very hard to eliminate nitrates from the food my family eats, but it is very hard. I don’t know if it’s in the hamburger that I buy and just try to find lunchmeat for sandwiches without it. The FDA should ban it since it’s a known carcinogen. It shouldn’t be up to the consumers to try to weed these toxins out of our diet-especially when we aren’t even told most of the time if it’s in what we consume or not.
I agree with you 100%. If they aren’t trying to kill people they should ban it.
I’m confused about nitrates. Vegetables like spinach & beets contain nitrates & they’re supposed to be healthy…and help to lower blood pressure. Are these nitrates handled differently by our body? If so, how. Thanks to anyone who could explain this.
